Producing a variety of baked products for consumers

Overview

The baker was approved for delivery on 09/06/2017. This Intermediate apprenticeship standard awards you with a level 2, qualification when completed. The usual duration of this apprenticeship is 18 months, but this does not include the End-Point Assessment Period.

What the course covers

The Baker apprenticeship standard will provide you with experience working alongside qualified bakers in a professional production setting, making a variety of products such breads, cakes, pies and pastries for a broad range of consumers in the UK and sometimes around the world.

You could be working in an industrial baking environment, overseeing large-scale bakes for mass production, or developing your abilities whilst working in a smaller craft bakery on a local high-street or supermarket.

As an apprentice, you will develop a set of core skills, knowledge and behaviours to perform your baking duties. These include knowledge of the history of baking and how production processes and methods have evolved, the use of different types of equipment and knives appropriate for each kind of recipe, and how to store, handle and use all the necessary ingredients such as flour, yeast, sugar and eggs.

You will learn how to work both individually and as part of a wider baking team, as you carry out quality checks on products and understand how to comply with food safety standards and industry regulations.
