Overview

The production chef was approved for delivery on 11/10/2018. This Intermediate apprenticeship standard awards you with a level 2, qualification when completed. The usual duration of this apprenticeship is 12 months, but this does not include the End-Point Assessment Period.

What the course covers

The Production Chef learns the basics of accurately producing food in a high pressure and time-sensitive setting. There are several different kitchen environments in which an apprentice could be working, such as in schools, commercial kitchens or even in a naval ship. Furthermore, each kitchen may produce starkly contrasting foods. As such, no apprenticeship will be the same, and so the scope for learning and entering a variety of exciting careers is massive.

The apprentice will learn how to produce food to strict guidelines. These include following precise recipes, quantities, portion sizes, budgets and hygiene standards. As well as learning to follow structures, the chef will learn how to experiment with food.

There are a few essential behaviours or skills that the apprentice will learn throughout the course. Primarily, the apprentice will have to learn how to operate within a potentially large team in a high-stress environment and for a wide range of customers. As such, teamwork and communication will be crucial. Furthermore, the apprentice will learn how to utilise numerous different kitchen equipment, depending on the restaurant. Throughout the process, an apprentice’s employer will expect them to prioritise the needs of the business and the environment by remaining as waste-free and efficient as possible.
