Overview

This Advanced advanced baker apprenticeship standard will provide you with a level 3, qualification. This apprenticeship standard was approved on the 08/05/2018 and typically takes 24 months to complete. However, it is important to note that the duration of the apprenticeship standard stated does not include the End-Point Assessment period.

What the course covers

The Advanced Baker apprenticeship allows learners to continue developing their skills and become a specialist baker, working in specialist stores or automated bakeries. They will experience various aspects of the industry as they build upon their existing knowledge and move into more technically advanced roles and grow into leaders of the future.

If you choose this apprenticeship, you will learn to produce products using a range of baking techniques and activities, and understand how to operate advanced machinery as you combine traditional recipes with modern practices. You will also develop a high level of understanding of the processes and quality monitoring procedures that are in place and required to operate a fully functioning bakery, and have the opportunity to experience the process involved with designing your own creations.

  • Learning a range of specialist techniques, such as long-ferment and lamination
