Overview

This Higher advanced dairy technologist apprenticeship standard will provide you with a level 5, qualification. This apprenticeship standard was approved on the 31/10/2016 and typically takes 36 months to complete. However, it is important to note that the duration of the apprenticeship standard stated does not include the End-Point Assessment period.

What the course covers

Advanced dairy technologists play a key role in developing, producing, and controlling the production of a range of dairy products, including milk, cheese and ice creams. Learners will use a combination of dairy science and modern technology to oversee the manufacturing process and manage it from start to finish.

The apprenticeship will draw up learner’s passion for the dairy industry and continue their development by undertaking a variety of knowledge and skills modules, including managing the maturation, ripening and texture development of cheese, and the manufacture of graded and tailored milk, whey powders and creams. Learners will also develop their knowledge of the principles of microbiology, and how it relates to dairy products, whilst using sampling and laboratory investigations to help identify and solve any issues with industrial processes.

Other areas of focus include operating and controlling both manual and automated dairy unit operations including cleaning, and applying CI techniques to resolve any other operational problems, and considering the sustainability and environmental effects of the supply stream.
