Producing a variety of beers
Overview
This Higher brewer apprenticeship standard will provide you with a level 4, qualification. This apprenticeship standard was approved on the 22/06/2018 and typically takes 18 months to complete. However, it is important to note that the duration of the apprenticeship standard stated does not include the End-Point Assessment period.
What the course covers
Working for a small scale or large national brewery, you will control the entire process of brewing a wide variety of beers, and understand how to assess its quality and recognise its characteristics and consistency.
As part of the apprenticeship standard, you will design and adjust recipes to produce a consistently high standard of beer to a range of specifications. To do this, you will learn the fundamentals of fermentation, conditioning and maturation, and the processing of ingredients before using them.
You will perform quality control checks, sensory, chemical and physical, and monitor the costings and efficiency of the brewery process. You will also implement a cleaning and sanitation schedule to ensure a high standard of hygiene in the workplace, taking personal responsibility for the health and safety of yourself and others at all times.
You will need a passion for the brewing industry, act as a role model and promote your brand by hosting or attending private and public events. You will need to work confidently and demonstrate integrity, calmly reacting to any issues with the production process.
