Preparing food under the supervision of a senior chef

Overview

Approved for delivery on the 27/04/2016, the commis chef, Intermediate apprenticeship standard provides a level 2, upon completion. This apprenticeship will typically take 12 months to complete, not including the End-Point Assessment Period.

What the course covers

A Commis Chef is commonly an entry position in the kitchen environment for aspiring Head Chef’s. This apprenticeship will provide you with valuable experience and teach you the cookery skills to help you progress your career in the culinary sector.

Under the supervision of a senior chef, you will operate basic functions of the kitchen, such as measure dish ingredients and portion sizes accurately, check and rotate food stock levels to minimise waste, and store it in suitable environments. You will learn to recognise and understand the basic principles of food preparation, including cooking and taste, and how to recognise the qualities and uses of a variety of ingredients.

You will learn to complete a variety of preparation and cooking tasks, delivering your food on time and to a consistently high standard, following detailed recipe specifications using traditional methods and techniques. You will also be able to identify and implement food hygiene standards and understand the consequences of not following them, and recognise potential risks in the working environment through awareness and vigilance.
