Overview

The senior culinary chef was approved for delivery on 25/02/2020. This Higher apprenticeship standard awards you with a level 4, qualification when completed. The usual duration of this apprenticeship is 24 months, but this does not include the End-Point Assessment Period.

What the course covers

This apprenticeship standard will equip apprentices with the skills, knowledge and behaviours to successfully work as a Senior culinary chef in the development of new recipes or food products. You will research, responsibly source, develop and launch products to meet specification briefs in line with the company’s vision, values and objectives.

This is an exciting role, with the focus on developing unique recipes from scratch. The daily tasks of a Senior culinary chef include maintaining high culinary standards, overseeing junior staff in all food preparation and presentation to ensure a high-quality standard, ordering and maintaining the inventory of food or supplies, and ensuring the kitchen is safe and hygienic. You will interact with a variety of professionals, including cooks, restaurant teams, owners, management and suppliers.

You will be responsible for leading the development of new menus and dishes within an organisation. This apprenticeship standard will have a strong focus on the development of leadership skills; you will be responsible for organising, motivating, and inspiring your team. You will typically report to the patron of a restaurant but will have a great deal of autonomy and freedom to be both creative and innovative.
