Overview

The senior production chef was approved for delivery on 07/09/2016. This Advanced apprenticeship standard awards you with a level 3, qualification when completed. The usual duration of this apprenticeship is 12 months, but this does not include the End-Point Assessment Period.

What the course covers

This apprentice may involve the management of a team or support of a head chef in larger organisations. You will supervise chef teams in a wide variety of environments including schools, the Armed Forces, care homes, hospitals, and casual pub or dining establishments.

The day-to-day running of the kitchen will be your responsibility, producing, monitoring and ensuring consistency of food standards, meeting legal requirements and quality standards across all stages.

You will maintain food safety management processes which relate to the delivery, storage, cooking and work equipment required alongside identifying training needs and assist in the recruitment of other kitchen personnel. This may also involve keeping up to date with product ranges, brand development and current trends.

Other responsibilities include the management of the catering budget, control of waste, cost reduction, and identifying areas for improvement concerning revenue, profit and customer experience. You will be required to develop an in-depth understanding of your customer profile, competitors and the business growth strategy to aid with an increase in performance.
